I'm in a cheesy mood tonight: Goat-cheese Stuffed Zucchini Pancakes
After watching CSI: Miami tonight, I felt compelled to make a post involving cheese. Horatio had it turned up a notch, and apparently the director thought if the camera shots were pretty enough, I would forget that the script was nonexistent. There weren't even enough bad puns to make it worth it.
Anyway, moving on. Goat-cheese Stuffed Zucchini Pancakes is a recipe I tried on my husband a couple months ago, and it turned out to be pretty good. It wasn't a hit when I first mentioned it, however.
Me: I'm making zucchini pancakes tonight.
Him: (Abruptly.) No.
Me: It's not actually pancakes, it's more like shredded zucchini fried with some other stuff.
Him: Maybe.
So I made them, and they turned out to be a hit. My husband compared them to eggplant parmesan (which I have never had since I don't like eggplant), and I thought the different textures and tastes went really well together. I really liked the goat cheese in the center, although I'd say you could probably try whole-milk mozzarella for a milder flavor. I didn't make Emeril's tomato sauce; instead, I used Barilla's marinara, which I adore. One less thing to have to cook! I might try the recipe with shredded potatos next time instead of zucchini.
