It's Pizza Day! (With photo goodness)

This recipe is a new favorite for me and my husband. It's inspired by a recipe handed to me by Herb Everett -- and being me, I had to change it up a bit. It's quick and easy, and it's a comfortable, filling meal.

Prosciutto and Pesto Pizza Sandwiches

8 slices of a sturdy Italian bread
4 or more slices of prosciutto
1.5 cups of grated mozzarella
3/4 cup Miracle Whip or mayo
1-3 Tbsp. basil pesto

Stir together the pesto and Miracle Whip, adding more pesto to taste.

Spread one side of your 8 slices of bread with the half of the pesto mix. Tear or cut the prosciutto into bite-size pieces. Divide the prosciutto among 4 slices of bread.

Divide the grated mozzarella on top of the prosciutto. Place the other four slices of bread on top of the mozzarella, mayonnaised side down.

Cover one side of the four sandwiches with half of the remaining pesto mix. Heat a pan on medium high and place the sandwiches, pesto side down, in the pan to grill until golden brown.

Spread remaining pesto mixture on the tops of the sandwiches as they cook. After a couple minutes, flip the sandwiches to grill the other side until golden brown.

You can serve these sandwiches with a side of tomato soup, or they work well alone. And while prosciutto is a favorite of mine, you can change it up for pepperoni or Canadian bacon for a lower-cost alternative.

It's just a different take on pizza -- think of it as folding your slice of prosciutto pesto pizza in half and grilling it :-)

Seriously, to me, it has the same tastes and flavor combos that pizza does, it's just on bread. This could easily be put on tortillas if you want that thin pizza crust feel.
