Barbecue hamburgers, with the bacon already inside

Last week my husband and I were watching Iron Chef America, where the theme ingredient was ground beef. Of course, one of the chefs decided to make a spiffed-up burger for one of their dishes -- and wouldn't you know it, they used bacon. (I have long maintained that bacon makes everything better.) But that was not where I started drooling -- that happened when the chef cooked the bacon and added it to the ground beef before cooking the burgers!

This was something I immediately wanted to experiment with. So Thursday night, with my husband and a friend from work as guinea pigs, I set about creating a new hamburger recipe. (Iron Chef, while a wonderful show, does not provide recipes for their dishes.)

What I ended up with I will probably never be able to duplicate, since I don't really measure when I cook. But here are approximate amounts for what turned out to be a really great burger recipe. It was juicy and flavorful -- I can only imagine what it will taste like when I feel like cooking out on the grill. (Yes, I committed cardinal sin No. 1 of cooking hamburgers -- I cooked them in a pan on the stove.)

Barbecue bacon burgers

1 to 1.5 lbs of lean ground beef
1 to 1.5 lbs of ground pork
12 oz. Oscar Mayer center cut bacon
2-3 tablespoons shallots, diced
2 tablespoons garlic
1-2 tablespoons A1 steak sauce
2 eggs
1 cup Sonny's sweet barbecue sauce
salt
pepper
slices of mozzarella

1. Cut bacon into 1-inch pieces. (I use kitchen shears -- much faster.) Cook on medium until nearly done.
2. When the bacon is close to done, add the shallots and garlic. Stir occasionally until bacon is done. Set aside.
3. Mix ground pork and beef. Add eggs, barbecue sauce and steak sauce and mix well.
4. Add bacon, shallots and garlic to ground beef and pork mixture and mix well. Season with salt and pepper.
5. Form into patties. My mixture made about 9 patties, but it depends on how thick you want your burgers.
6. Cook on grill or stove top, flipping occasionally, until the meat is no longer pink inside. (The bacon may throw you -- I kept seeing bits of dark pink and thought the burgers weren't cooked, until I realized it was the bacon I was seeing.)
7. Top with mozzarella and cook for another 15-30 seconds to melt the cheese.

My friend and my husband really enjoyed the burgers, and more importantly -- since I'm my own worst critic -- I adored this recipe. The bacon is worth the extra time it takes, and combined with the barbecue and garlic, this is the perfect burger to impress your friends and family with.

Well, i just stumbled on this blog, looking for bbq blogs. I will try that recipe this weekend. We're having some friends over and were planning to grill out. Now, i have another twist to throw at you. I have a Chipotle BBQ Sauce that is very smoky, not hot, but good and spicy. That is what i will use instead of the sonny's.
