In the Pink: Curry Salmon Cakes

La Dolce Vita is sponsoring a blogging event this weekend called In The Pink, which she is hoping will raise breast cancer awareness. I know several people who have have had breast cancer, including a close aunt, so I decided to take part in this event. If you'd like more information about breast cancer, go to the Susan G. This was another dish I put together for my friends from D.C. Salmon is something I don't get very often because my husband doesn't eat fish, so I jumped at the chance to cook with it. Not to mention it's pink, so it worked this weekend on a couple levels. (I made a couple of marinated chicken breasts in the oven for him.)

Curry Salmon Cakes
14.5 oz canned salmon, no bones or skin
1 tablespoon red curry paste
1 tablespoon fish sauce
2 tablespoons fresh basil, chopped finely
1/2 onion, chopped finely
1/2 cup bread crumbs
1 egg
2-3 tablespoons canola oil

Drain salmon, and add onion, basil and bread crumbs, mixing with a fork or your hands. Mix together curry paste, fish sauce and egg in a small bowl until smooth. Add to salmon mixture. Form six patties. Heat oil on medium high in a pan on the stove. When a small bit of the salmon mixture sizzles when you put it in the pan, add the patties to the oil. Cook for three minutes on each side. Serve hot.

In addition to the salmon cakes, I served zucchini sauteed with onions and covered with grated parmesan cheese, sliced Italian bread and a sweet potato casserole. The sweetness of the sweet potato dish worked excellently with the spiciness of the salmon. It was a bit too spicy for me, but I don't have a high tolerance as it is. I'll probably cut it down to 1/2 a tablespoon of curry paste in the future.

The SALMON Cakes were beautifyl, if you didnt know any better you wouldnt have known it was fish. The sweet casserole was insane and made a perfect breakfast the next morning (or afternoon by the time I got up) Thanks for making my belly happy:)
