Easy chicken bundles

I picked up a copy of the Taste of Home Brand-Name Cookbook at the grocery store the other day, and one of the recipes caught my eye. It was called gourmet chicken bundles, and I decided to put my spin on it for dinner a couple weeks ago. It turned out OK, but I'll continue to play with it. The mixture was missing something -- and after talking to a couple of fellow foodies at work, I think I'm going to try adding cheese to the mixture next time right before folding them up and putting them in the oven. Any other suggestions?

Easy chicken bundles

1/2 cup chopped onion
1 package sliced mushrooms (8 oz.)
8 ounces maple pork sausage
1 Granny Smith apple, diced
2 tablespoons butter
1/2 teaspoon rubbed sage
1/4 teaspoon dried marjoram
1/8 teaspoon ground allspice
1 egg, separated
3 cups cubed cooked chicken
18 Rhodes dinner rolls, thawed but cold (available in freezer section)

Cook the onion, mushrooms, apple and sausage in butter in a skillet until the sausage is no longer pink. Put the mixture in a large bowl and add sage, marjoram, allspice, egg yolk and chicken, and mix it well.

Roll three of the rolls together in your hand into a ball. Flatten into an 8-inch circle. (I used a rolling pin and a lightly floured surface.) Repeat with the rest of the rolls. Divide the mixture equally between the six rolls.

Moisten edges of dough with a bit of water on your finger, and lift two edges of dough and fold over the mixture.

Lift opposite edges to completely enclose filling. Pinch the seams to seal.

Put the folded side down on a greased baking sheet, and brush with the beaten egg white.

Cover with plastic wrap and let them rise for 15 minutes. Remove wrap and bake at 350 degrees for 30-35 minutes or until golden brown.

Off the top of my head ... LOL

Swap out bacon for the sausage.
Leave out the apple.
Add in cheddar cheese and mushroom soup.
Swap out the spices for parsley.

The Southerner in me says everything is better with bacon, cheese and mushroom soup. ;) Now am I expected to try this version out and taste test it?!?!? hee hee
